This is one of the few recipes I have made recently that I really felt like I didn’t change it up enough to call it my own. So, I contacted Landria Voight, who writes the Stir It Up blog and asked her if I could just re-post her link. She was very gracious and said of course. The only substitutions I made were because I didn’t have her suggested ingredients. I used coconut vinegar for rice vinegar, coconut aminos for tamari and white wine vinegar for cooking white wine. Everything else was spot on. Oh yeah, except for the cashew because Jeremy is allergic. It was a really delicious meal, thumbs up by all 5 of us. As you can see, I served it with sautéed bok choy and rice for the kids and Matt. Enjoy!
