As often happens, I had a lot of really ripe bananas so I decided to make banana pancakes. I am not a huge pancake maker, but sometimes the kids beg for them. At least it is not bisquick … I am not sure where I got the recipe from but I found it handwritten in my recipe book binder, so it must have been tested by someone, or so I thought.
All was looking good until I tried to flip them. Let’s just say, it was not pretty. BUT, they did taste really awesome in the bits of pieces that remained so I quickly tried to figure out what to do with the remaining batter. ABRACADABRA! Magic Banana muffins. I didn’t snap a picture when I made them the first time, but trust me, Jeremy and Zach devoured them. Last night I re-created them and according to Jeremy, they are even better now!
Magic Banana Muffins
Prep time – 2 minutes
Cook time – 10 – 12 minutes
Servings – 8 small muffins (serving size is 2 muffins)
•2 large eggs
•2 bananas (ripe ones)
•1/2 tsp. vanilla
•1/2 tsp. cinnamon
•1/4 tsp. nutmeg
1.Preheat the oven to 375 degrees
2.Beat all ingredients in a medium bowl with a mixer
3.Line a muffin tin with silicone or paper liners (I used a silicone muffin tin)
4.Scoop batter into each liner, about 2/3rds full
5.Bake about 10 minutes or until lightly brown on top
