So, I am a reformed Starbucks addict. In the summer it was trente ice coffees with soy milk. In the winter it was soy lattes, sometimes even with vanilla syrup. Often I made 2 even 3 stops per day. Slowly but surely, I weaned myself from the soy (a good thing all around, but especially because I am allergic to it), but then I started bringing my own vanilla coconut milk. It was better, but still filled with carrageenan and sugar, so really not a great choice. About a year and a half ago, I started buying Aroy-D coconut milk, which I absolutely love. It has no carrageenan, no guar gum, just pure coconut milk. Then last spring, I switched from caffeinated coffee to decaf. This was HUGE! It helped to conquer a number of health issues including sleeplessness and digestion problems.
Still sometimes, I just really have the craving for a latte. For the holidays last year, my husband bought me a milk frother. It was honestly one of the best, most perceptive gifts he has ever purchased for me. So now, I can make my own latte at home. You can too — by either purchasing one of these or just boiling your almond or coconut milk in a saucepan.
Vanilla Coconut Milk Latte
Prep Time: 5 minutes
Cook Time: None
- 8 ounces of hot coffee (decaf or regular)
- 4 ounces of almond or coconut milk
- 1 tsp. vanilla
- dash of cinnamon
- 3 – 5 drops of stevia (optional)
- Put your brewed coffee in a large mug.
- Steam your milk in a frother or boil in a saucepan.
- Add milk to coffee.
- Add vanilla and stevia (if desired) and a sprinkle of cinnamon.
- Sip and Savor!!!!
My favorite latte mug is the one in the picture above. My niece Jessica made it for me when she was about 7 (she is now 12 1/2). I love it and think of her every time I have a latte!
